Red Enchilada Sauce

Ingredients

1 T EVOO

3 cloves garlic, minced

1/2 med onion, minced

1/2 tsp dried oregano

1 T chili powder

1/2 teaspoon dried basil

1/4 tsp black pepper

1 tsp dried parsley

ΒΌ tsp salt

1/4 tsp cumin

1 T chipotle adobo sauce

1/4 cup prepared salsa

1 (6- oz) can tomato sauce

1 1/2 cups water

Description

Use in place of canned enchilada sauce.

Directions

Saute onion & garlic in EVOO in 2-qt saucepan.
Addle seasonings & tomato sauce. Mix together & then stir in the water.
Bring to a boil, reduce heat to low & simmer for 15-20 minutes.
